    This recipe is from the cookbook Isle Royale Families Cookbook, 1886-2013. The recipes were submitted by the Swede-Finn women who lived on Isle Royale, Mich. at that time. Our family made hardtack the same way. We liked to eat it with butter or peanut butter. I also like it with pickled herring. Some Scandinavian stores sell it prepackaged. It was made in Finland with a hole in the middle and hung on a pole that stretched across the ceiling.

    Hardtack

    2 c. white flour

    2 c. oatmeal

    2 c. margarine

    1/2 c. sugar

    1 1/2 t. salt

    3/4 c. warm water

    1 t. baking soda

    Mix water and soda. Blend shortening, sugar and salt. Add dry ingredients alternating with liquids. Chill dough. Cut in cookie size pieces with knife or pie trimmer. Roll onto floured board and prick with a fork. Place on unbuttered cookie sheet and bake 350°.
