  • The best pancake in the world..

    Heli Haapamäki introduced this recipe in 2006 and it has gained incredible popularity in Finland. It has been viewed online more than 7 million times... more than the population of Finland.

    Ingredients:
    9 oz. wheat flour (260g)
    4 oz sugar (110g)
    1 tsp baking powder
    1/2 tsp salt (if using salted butter) (1 tsp for unsalted butter)
    1/2 tsp vanilla extract
    1 tsp ground cardamom - optional
    28 oz milk (800g)
    2 eggs
    2.5 oz. melted butter or margarine (70g)

    Beat the eggs lightly and add milk. Mix dry ingredients together and add the mix into the liquids. Add the melted, cooled butter/margarine.
    Pour dough onto a baking sheet, lined with parchment paper (about 16 x 40 inches). Bake at 400° for 1/2 hour.

    I don't think there is a baking pan that size in most US households.. I'd divide the dough onto 2 baking sheets of 11x16. They pictured a serving topped with berries and whipped topping.

    Whole wheat flour or regular white flour?

      The recipe doesn't indicate type of flour, but when I checked other recipes for Finnish pancakes, they all used all-purpose flour.

        Thanks. I have to try this; I'll cut the recipe in half. Blueberries and whipped cream.

          Just heard from a couple other people who plan to cut the recipe in half.. sounds yummy with berries and cream!
